Protein bites

Why hello there :)

Yup, it’s been a while.

A lot has happened since we last spoke.

Stud and I moved in to our very own home. Complete with a garden and a pool :) that’s right, we bought a house! ARGH! It’s great being back in our own space again (Pants off Sunday is back in effect!), and we’ve been pretty chilled since then (then being the beginning of June…lazy), just hanging out and lazing around.

In food news, I have removed fish from my diet so am now a fully fledged vegetarian, although Stud still sticks with the fish when he can.

To be honest, along with the whole house thing, I have been trying to find my way again when it comes to the blog. I’ve been trying all types of new ways of cooking, and am also trying to be super healthy when it comes to my diet.

Now I’m about to get all D&M with you guys, but I haven’t been happy with myself for some time now. I’ve been steadily putting on the kilos since our wedding and a couple of months back, decided I wasn’t going to keep whinging about it, I was going to do something about it!

Not a “diet” as such, more a lifestyle change. Now I know heaps of fitness wanders say things like that, but in my case it’s true. I was really good before the wedding with my eating. Sure I would indulge every now and then, but for the most part, I ate well, I exercised regularly and my body thanked me for it by getting in to some good shape! So far, since September 1 I have lost 7kgs and am looking to lose quite a bit more, but mostly just start to feel good about myself again.

I’ve stopped looking at the caloric intake of my food, and started looking at what it does for my body. A lot less sugar, a lot less useless fat, heaps or protein and a good amount of carbs. So I’ve been getting in to lots of healthy snacks to fuel my morning workouts. Case in point, these awesome protein bites!

A little while ago I was contacted by the peeps at Well Naturally about their sugar free chocolate range and naturally (pun intended), I jumped at the chance to give them a shot.

I immediately knew I wanted to make some protein balls as my recipe (read below the recipe for the chic reviews). Perhaps choc chip cookie dough, maybe something to rival Reese’s (cos we all know how much I love the PB&C combo), or maybe just something packed with super foods. The world was my oyster!

Now I’ll be honest, these started out as something completely different, but as kitchen mishaps would go, you work with what you’re given and then turn it in to something amazing!

They are deliciously nutty, somewhat crunchy and have a deliciously bittersweet innard. I give to you, my protein bites!

Protein Bites
Makes 30 balls

Ingredients

2 cups cashews
4 scoops protein powder (I used Perfect Fit Vanilla)
1 cup shredded coconut
1 tsp coconut nectar
2 tbs natural peanut butter
2 tbs chia seeds
200g bag of Well Naturally Sugar Free Dark Chocolate Melts

Method

Using a high speed blender, blend cashews, protein powder and coconut until combined and start to form a ball.

Add in coconut nectar and peanut butter and pulse til combined.

Turn mixture out in to a bowl and stir through chia seeds and melts. Place in the fridge until hardened enough to form in to balls.

Using a teaspoon, measure out small balls and place on a tray lined with baking paper. Return to the fridge to set.

Once set, keep in an air tight container in the fridge.

Now in all honesty, I am not a fan of mint chocolate so I have that one to Stud. He had nothing but nice things to say about it.

I loved that the chocolate wasn’t too sweet and even the milk chocolate had somewhat of a bittersweet taste to it. Its how I love to eat my chocolate so this suited us to a tea really.

My favourite out of the lot would have definitely been the Acai. Little hints of sweetness is their delicious chocolate, I could have eaten the whole block in one sitting! But moderation is now my key, so its still waiting for my to devour another square.

Definitely worth chucking in your trolley to try out ;)
